Does Mary Macon contain nitrites? Yes! But one packet of Mary Macon has LESS nitrate in it than a bunch of celery. For more info on nitrites in food check out http://foodstandards.gov.au/consumer/addtives/nitrate/Pages/Defults.aspx
What is Mary Macon made from? There is no pork at all used in Mary Macon. It uses the mutton leg, just like a roast.
Where does the meat come from? We use only Australian sheep meat in the making of Mary Macon.
How is it made? Starting with the mutton leg, the meat is then cured and smoked similarly to the way pork is processed into bacon.
Do you need to cook Mary Macon? Yes! (unless you like eating bacon raw – but we don’t recommend that either). Cooking Mary Macon is just like cooking bacon. Download the free eBook on the cooking page of this website for tips and recipes.
Do you need to keep Mary Macon cold? Yes, it should always be stored below 5º.
How can I get Mary Macon delivered to me if I am not in the Fraser Coast area? We can pop some Mary Macon into a polystyrene box with some dry ice packets and ship some off in your direction. The box will stay cold only for 24hrs, so it will need to be delivered to an area that receives Australia Express Post or picked up from a Mail Centre.
